Ingredients

  • 1 Greener Pastures whole chicken (3-4 lbs)

  • 2 tbsp organic olive oil

  • 2 tsp sea salt

  • 1 tsp organic black pepper

  • 1/2 tsp organic celery seed

  • 1 organic lemon, quartered

  • 4 sprigs of fresh organic thyme (optional)

Preparation

Instructions:


  1. Preheat your oven to 425°F.

  2. Remove the chicken from the packaging and pat dry with paper towels. This will help the skin crisp up in the oven.

  3. Rub the chicken with olive oil and season with salt, pepper and celery seed. Make sure to season the chicken inside the cavity as well.

  4. Stuff the cavity with lemon quarters and thyme sprigs, if using.

  5. Tie the legs together with kitchen twine, tucking the wing tips under the body of the chicken.

  6. Place the chicken in a roasting pan or oven-safe skillet, breast side up.

  7. Roast the chicken in the preheated oven for 50-60 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F.

  8. Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.
